governed Kutobta D722 deal killer?

I found a Kubota D722 for pretty cheap. It was in an Onan 7.5kw generator out of a motorhome. I mentioned what I want to do to the seller and he said it's not a good motor for that because it's governed.
I know this is probably Diesel Bike 101, but don't all these swaps have to overcome a governor?
Is there a fundamental difference between a variable RPM engine and a governed or "fixed RPM" engine?

If I'm looking for a donor engine, is a governed engine a deal killer?

I have my grand and crazy ideas, but I don't want to make a terrible mistake on my first move.

Snatch it up Kevin if it's a good deal. Great engine for a bike IMHO. Yes, it is currently governed for the generator application. But, the conversion to a variable speed is a couple of 6 mm bolts that hold the variable speed control plate on. From Kubota it's about $75. But, I picked one up last week at my local Kubota dealer off of a low hour 722 that was trashed from over heating and got it for a fraction of that. You should be able to get used one quite easily. If not, here's an on-line source for it.

See if you can take the drive pulley with it if you buy it. In that application they typically use a poly-v belt pulley which can then be removed for mounting whatever you want on to what is effectively your flywheel adapter. You end up with a 50 mm shaft, but it makes for a cheap flywheel adapter. I had my local Amish machine shop turn down the adapter from the full diameter of the flywheel to just enough to incorporate the mounting bolts. And then had them bore a pulley to fit the 50 mm shaft since I'm doing a belt primary. Cost me a whopping $30.
The irony with the Amish shop is that of course, they can't be connected to the dreaded "grid" (read electric lines) to run all of their machine shop equipment. Instead, it's all run with a Deutz powered stationary generator (they're a Deutz dealer). And they took great delight in learning about a diesel bike conversion. Great guys.
