Can anybody offer an answer to what output the alternator has on the 1B30 hatz 14 volts I assume but what amps or can I remove the + wire from the battery and pop an ammeter in line would that work ?

The ammeter popped in the +line between the battery will do, but the current depends on the charge state of the battery.
Instead of the battery, better use one or more H4 bulbs, like 45 W bulb consuming ~ 4 amps @ 14 V
The alternator output voltage should be measured at same time.
