Full out on the "highway" I get about 40km's from it. 137km/hr until the engine is toasty then it throttles down and settles around 100-110km/hr as far as i've seen.
When I ride local roads I'm up to 60km range and doing about 65km/hr average. With high acceleration.
But when you have a change to go slow, it's possible to overshoot their own predicted range. It will take hours then but you can make 150km happen. Riding like a granny moped.
The wh/km use indicator is good to use when you're taking it slow. You have plenty of time to calculate what your usage should be if you want to make it somewhere.

Bert just knock up a trailer with an old diesel generator in it and bring it to Hamm.

I've actually posed this question many times to electric bike guys, the only problem is high end bikes usually have a BMS system to keep the cells safely balanced and prevent you running them down too far. It's the BMS that can't handle both charge and discharge at the same time.
I quite fancied a simple lead acid battery used for high demand times such as acceleration but in the main the generator would be capable of supplying sufficient current for steady speed cruising.
I do have a little electric moped with a 1400 watt motor that I will be playing with, so far I have sufficient parts to upgrade it to 72v and even a 3kw rear hub motor but soldering up 200 lipo cells is making me nervous....
