Have you considered keeping the 4 speed GB and fitting the 'trials' gearing from Hitchcock Motorcycles (in the UK)? This would give you something for the steep bits but retain the 1:1 4th gear ratio. You could then play around with the drive sprocket teeth count to find your best option.

I knew someone with a 'modified' Kawasaki 750 triple in the mid 70's. He fuelled up at Leicester Forest East and ran out before reaching next northbound services! We figured about 6mpg, but wheelies at 90 without slipping the clutch sort of made up for it!
